Red Lentils and Split Red Lentils (masoor)
Lentils are easily available in many grocery stores. Similar to the mung beans the entire red lentils are often sprouted then utilized in soups, rice dishes, and breakfast bowls. We can sauté them with some salt and pepper for a protein-packed breakfast or snack. Split red lentils cook very fast and make delicious daal.
White and Green Peas (Vatana)
The dried white peas look very almost like chickpeas, except they’re smaller and round. They are used in making the famous ragda-pattice. Both white and green peas are often soaked then pressure cooked to form delicious curries and soups. In India, people used dried green peas when fresh peas were not available.
Yellow Pigeon Peas (Toor or Toovar Daal)
These come as whole beans too but we only buy these split and skinned. In Maharashtra, Toor Daal is used to make the everyday dal. Favorite version of this is the spinach dal, made with lots of garlic, spinach, and tomatoes! The South Indian Bisi bele bhath using toor daal in Instant Pot comes out super authentic and attractive.
Split Bengal Gram (Chana Daal)
These like the yellow pigeon peas are always bought as split and de-skinned. Though lentils make delicious daals and other dishes, favourite way to use them is in making the authentic Puran poli’s.
Turkish/Dew Gram Beans (Matki or Moth Beans)
These are used to make the traditional matkichi usal, which is an aromatic and super delicious curry made with sprouted Turkish gram. They have a nutty flavor with an earthy smell. These also are available in the split and de-skinned form.
Pulses are highly recommended by nutritionists. They play a major role in strengthening our immune system, thereby protecting us from numerous medical conditions. Known for regulating serum lipid profiles, pulses also check blood pressure, a common medical condition owing to modern high-pressure lifestyle and also old age.
